Is there any impact in the process that is created with Salesforce Adapter along with version upgrade of Salesforce (Example: Winter '13 → Spring '14)?

There is no influence on the process if the version of API used in the Salesforce Adapter is not changed. There might be impact to the operation, only when the version of API that is being used is changed to the another version (Example: 18.0 → 26.0).

Described as given below in "Backward Compatibility" (pp.4-5) of pp.4 "SOAP API support policy" (As on February 13, 2014)
 
The support of each SOAP API version is maintained in all platform software releases. The application created to function in the specified SOAP API version will continue to function with the same SOAP API version even in the later platform software releases, which means that there is backward compatibility in SOAP API.
 
In Salesforce.com, it is not assured that the application created for certain SOAP API version will function in the later versions. As SOAP API is continuously enhanced, there are instances where the changes of method signature and data display are predominant. However, when it is necessary to shift the application to a new SOAP API version based on the changes, the consistency of SOAP API between versions is maintained at a minimum level.
 
 
The application created by using SOAP API version 9.0 belonging to Winter `07 release supports continuously for SOAP API version 9.0 of Summer release and also future releases. However, the application might have to be changed so that the same application may function in SOAP API version 10.
